My husband said I “NAILED IT” when it came to this coconut oat cookies recipe that I adapted from this one. We didn’t try making the originals, but my sister made them and wanted me to try to make a version with less sugar and no eggs (she has an intolerance). I was so excited by how good the dough in my first batch was, and when they came out of the oven I texted her, “womp womp.” Totally flat, greasy, and unappetizing. But after another couple attempts, the recipe is not only worth posting, but one that we will make over and over! Crispy on the outside and chewy on the inside, and bursting with coconut flavor. Plus, they are made without refined sugar and flour, so you can indulge without feeling the guilt!
First steps
First, make your chia egg. It’s easier to do than you might think… just put 1 tbsp. of chia seeds in a mug and add 3 tbsp. of water, and let it “gel” for about 5 minutes while you measure out your dry ingredients.
Mix together almond meal, baking soda, baking powder, and salt in a medium bowl.
In a large bowl, cream together coconut sugar, coconut oil, vanilla, and chia egg.
Slowly add the dry ingredients from above until well mixed. Then, add in coconut and oats. This will be a very thick dough.
Drop by the tablespoonful on a baking sheet lined with parchment paper or a Silpat.
Bake at 350 degrees for about 10 minutes. NOTE they tend to look a little dark, this is because of the coconut sugar, not because they are burned.
